Sites upgrading from 5.x to 6.x will want something they can show users. While such documents will have certain site-specific features, I believe the community will benefit from a shared core. I'm going to go screen-by-screen and point out what's new and improved. My site will be going from 5.0.19 to 6.0.4, so those are the versions I'll be comparing.. but if someone wants to contribute text noting pre-6.0.4 or post-6.0.4 differences, that's fine with me.
The focus is not "Here's why Zimbra 6 is a great thing" but "OK, we just upgraded the server. Here's how to take advantage of the new features."
Existing work
- Zimbra's what's new - Highlights a few features, but really just advertising, with little HowTo.
- CSU Fresno's What's New - Similar to the above.
- Release Notes - Way too verbose and administrator-focused, but a good reference.
- Feature List - Good list for people doing product evaluations, but not for end users. The yellow-highlighted "new" items might be a good starting place for this document, though.
- Built-in online help - Really quite excellent, but what we want is just the bits that would be new to an experienced 5.x user
- Bug 42112 - End User Guide for 6.0 - Offline PDF of the above, mostly

At first glance, the Zimbra 6 Mail tab looks the same as it did in 5.0. You should be able to work as you did before. But many new features are just beneath the surface.
To provide more vertical space for folders, the "New Folder" bar has been changed to a button to the right of the word "Folders."
If you click to open the "New" menu, you'll see keyboard shortcuts. For example, "nf" will create a new folder. Previously, these keyboard shortcuts were only listed on a little-noticed Preferences page.
Under the "View" menu, there are two new options. "Reading Pane On The Right" sets up a three-pane view that works very well on wide screens. "Expand conversations from old to new" puts the oldest message first.

Empty start and end dates for creating tasks which are not time sensitive.
Preferences
